Easy Roasted Chicken Thighs

Tonight’s dinner from Chef Danny was a quick and easy meal (and one of Danny’s favorites because he can eat like a heathen and gnaw the meat off the chicken bone!).  We always share a sweet potato (baked in the microwave) and have a side salad to go with the chicken.  Delicious!

This recipe comes from Danny’s head (we use two chicken thighs – one for each of us):

  1. Pat chicken thighs dry with a paper towel.
  2. Season with the following spices: Salt, pepper, garlic powder, onion powder, paprika, and oregano. (Note: the amount of spices Danny uses depends on the day, try it out with however much you’d like)
  3. Bake at 425 degrees for 30 mins on a cooling rack (place cooling rack on top of a cookie sheet lined with aluminum foil).
  4. Once chicken has reached an internal temperature of 180 degrees, you’re good to go!
