Whole30 Almond-Crusted Sole with Chive-Garlic Mashed Potatoes

We are LOVING our new Whole30 Cookbook!  This was our first recipe out of the cookbook and it was delicious!  I’m noticing a fish trend in our meals lately?  We were so burnt out on chicken it was bound to happen…

Danny actually preferred the small piece of fish he didn’t have almond coating (just salt and pepper)!

We had this with a simple side salad (with olive oil and balsamic vinegar for dressing).  Such a filling meal, but not at all heavy.  A great date night in meal without the regret!
